Flexible processing equipment for the food industry

Consumer needs are constantly changing. Food manufacturers must therefore remain absolutely flexible to enable their formulations to be continuously optimised. The process solutions on show at the FrymaKoruma stand at PROCESS EXPO 2013 in Chicago (USA) are designed to help producers meet these challenges

FrymaKoruma MaxxD Lab vacuum processing unit

The FrymaKoruma MaxxD Lab vacuum processing unit is mainly used to perform test series and produce very small batch sizes. In the lab scale version, the MaxxD has a usable volume of between three and twelve litres. Food manufacturers particularly value the rotor-stator system when it comes to manufacturing mayonnaise, ketchup, sauces, dressings, spreads and chocolate masses. FrymaKoruma offers reliable scale-ups for all formulations: precisely defined processes and finely scalable parameters form the basis for reproducible results and premium product quality.

The MaxxD Lab processes liquid and semi-solid forms with the help of efficient homogenising technology to obtain stable emulsions and suspensions. The ingredients are fed to the homogeniser by means of an integrated, controllable vacuum system. The rotor-stator tool inputs the shear energy into the product mass and conveys the formulation to the machine’s main vessel through a recirculation line. A scraper agitator inside this vessel provides good macro-mixing and guarantees optimal heat exchange during the heating or cooling process. The special geometry of the vessel and the process tool allows significantly shorter batch cycles.

FrymaKoruma MZ toothed colloid mill

The toothed colloid mills in the MZ series are FrymaKoruma’s response to the increased demands in the food industry with regard to flexibility and milling efficiency. The milling system is perfect for producing soy milk, fruit and vegetable juices, nuts and meat or fish pastes. It impresses with its rotor-stator principle: a ring-shaped stator with internal teeth slides over a high-speed rotor with external teeth, making sure each product is always milled to the correct size. The rotor revolves in the stator around its own axis at continuously variable speeds that can peak at up to 50 metres per second. The shearing, rebound and crushing forces acting on the product can be optimally controlled in this way.

With a choice of coarse, standard and cross-toothed tools, the processing process is precisely adapted to the product in question – from liquids to highly viscous suspensions and emulsions. The axial milling gap between the rotor and stator can be infinitely adjusted. The FrymaKoruma MZ achieves particle sizes of 0.5 to 0.1 millimetres. The toothed colloid mill is available in several different sizes with a product throughput of 100 to 40,000 litres an hour, depending on the application. The conical milling space prevents residues from the production process from accumulating inside. The engineers responsible for designing the mill paid particular attention to eliminating all dead spaces such as gaps, corners or slots from the interior. The FrymaKoruma MZ is shipped either as an open (hopper) milling system or as an in-line model.
