Functional binder and emulsifier for formulating re-formed and comminuted meat products

Following a major scientific breakthrough by Ulrick & Short Ltd, the leading clean label ingredients specialist has announced the launch of its brand new functional binder and emulsifier for formulating re-formed and comminuted meat products.

Complex E is the latest addition to Ulrick & Short”s long established range of clean label wheat proteins and was designed to provide meat processors with greater formulation flexibility at a significantly lower cost than other binders already on the market.

With the meat industry coming under the spotlight again with more stringent ingredient regulations, the timing of Complex E”s launch is perfect. Complex E meets the needs of the industry, which is crying out for a highly functional clean label binding solution that can deliver on succulence, taste, texture and quality. 

Ulrick & Short developed Complex E using an intricate method of fractionation and extraction, where less protein and more carbohydrate and pentozans from the wheat were utilised. This unique process gives meats including sausages, burgers and processed meats a firmer texture, superior eating quality and enhanced water binding and emulsification capabilities.
This new clean label wheat extract will provide meat processors with innumerable opportunities to create countless new products, where Complex E has the added benefit of being able to be declared as a kitchen cupboard staple, “wheat flour”.
