Memory Lane Cakes is celebrating a creamy triumph thanks to some cutting-edge mixing technology! This top-notch bakery, based in Cardiff and part of the Finsbury Food Group, has taken a big leap forward in its production capabilities by bringing in the latest Horizontal Helical Blade Mixers from John R Boone. This new gear is making the process of whipping up cake batters, buttercream fillings, toppings, and ganache for both branded and private-label products a whole lot smoother, especially for many of the UK’s leading supermarkets.

Keeping Up with Modern Bakery Demands

Adapting to the ever-changing tastes of British consumers is no easy feat. With over 100 buttercream recipes and a diverse range of cake batters, the mixing equipment has to handle some serious demands. Creams, in particular, can be tricky, as they require blending 5kg blocks of butter at chilly temperatures of 8–10°C. Plus, ganache mixtures, which are made up of about 60% chocolate and 30–40% cream, need to be handled with precision.

Each unit features a hygienic, user-friendly touchscreen control panel. Recipe data, including mixing times and ingredient sequences, is conveniently stored on a memory card, making it easy to access for seasonal production runs. Plus, the system is fully compatible with broader factory control networks, paving the way for future integration.
